Delicious, melt-in-your-mouth Beef Short Ribs & Gravy take some time, but so does everything worthwhile!
Ingredients
8 beef short ribs
3 tbsp olive oil
3 c. semi-circle slices of onions, ¼-inch thick
10 oz. dark ale or stout beer
3 sprigs of fresh parsley left on the stems
3 sprigs of fresh thyme are left on the stem
1 ½ quarts vegetable stock
4 tbsp tomato paste
1 tbsp Worcestershire sauce
salt and pepper to taste
¼ c. (½ stick) unsalted butter
¼ c. plus 2 tbsp, all-purpose flour
How to make Beef Short Ribs
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: Heat the olive oil in an oven-safe Dutch oven over medium heat. Add the ribs to the simmering oil and sear each side (if needed, sear the ribs in batches). On a clean plate, place the seared ribs. Set aside.
Step 3: Saute the onions in the same Dutch oven until tender. Add the tomato paste and stir well. Pour in the ale or beer and deglaze the pan. Let everything boil until half of the liquid has evaporated.
Step 4: Next, add the thyme, parsley, stock, and Worcestershire sauce. Stir well and return the ribs to the pot. Put the lid on, leaving it a little ajar.
Step 5: Place in the preheated oven and bake for about 1 ½ to 2 hours until the meat is completely cooked, flipping halfway.
Step 6: To a clean plate, transfer the ribs and allow them to rest. Remove any of the thyme or parsley stems and discard. Into a large, glass bowl, pour the liquid and skim off the fat on top. Set aside.
Step 7: At this point, the ribs should be cool enough to handle. Take the bones off along with the fat, gristle, and sinew. Using two forks, shred the meat and set aside.
Step 8: Melt the butter in the same Dutch oven over medium heat. Once melted, stir in the flour until the lumps are gone.
Step 9: Gradually pour in the liquid and bring everything to a simmer. Allow the mixture to simmer until thickened. To taste, season with salt and pepper.
Step 10: Add the shredded meat and stir well.
Step 11: Enjoy the Beef Short Ribs immediately with mashed potatoes!
