Ingredients:
1 garlic bulb, cut the narrow top off, no need to peel
1 large white onion, dry skins removed, cut in half crosswise
8 guajillo chiles, stems cut off and seeds removed
3 tablespoons chicken bouillon
4 pounds chuck roast, cut into 4 large chunks
2 pounds short ribs (bone-in), or back ribs bone-in
1 teaspoon ground cumin
7-8 c of hot water
1 teaspoon Mexican oregano
1 carrot, cut in half crosswise, then cut in half (4 large pieces of carrot)
1 teaspoon salt, (adjust to taste)
1-2 teaspoon chili powder
5 bay leaves, dried
QUESABIRRIA TACOS
2 c quesadilla cheese, or any good melting cheese
14-16 white corn tortillas
Directions:
Add bay leaves, garlic, meats, dried peppers, onion, and carrots into a large pot.
Pour in enough water to submerge all the ingredients. Place it on the stove and turn the heat to high.
Add chicken bouillon, salt, cumin, and oregano. Stir everything until well blended. Allow the mixture to boil.
Remove the impurities from the meat that surface on top after 30 minutes of boiling it.
Transfer the pepper into a blender, then pulse until pureed.
Put the pureed peppers back into the pot together with chili powder, then stir until well blended.
Cover the pot with the lid, then simmer everything for 3 hours or until the meat falls off the bone or is very tender. Taste and add more seasonings if needed. Make sure to stir every 40 minutes during the cooking time.
Remove the meat from the pot, then slice them into large pieces.
Garnish each serving with chopped cilantro and onions.

For the Quesabirria Tacos:
Finely chop the meat.
Place a skillet on the stove and turn the heat to medium.
Coat the tortillas with the grease from the broth.
Put them into the hot skillet, then add chopped meat and cheese on top.
Cook for 3 minutes on each side.
Transfer onto a clean serving plate.
Serve and enjoy!
Note:
Remove the carrots, garlic, onion, and bay leave before serving.
