Ingredients:
1 frozen pie crust deep dish
1 tablespoon butter
1 medium yellow onion, finely diced
½ c diced cooked ham (I buy pre-diced from the grocery store)
6 slices bacon, cooked and crumbled
4 large Eggs
¾ c half and half
¾ teaspoon kosher salt
¼ teaspoon black pepper
⅛ teaspoon ground nutmeg
1 ⅓ c Gruyere cheese, shredded divided
½ 10 ounces box frozen chopped spinach, defrosted and wrung out in paper towels to remove excess moisture
¼ c chopped canned mushrooms wrung out in a paper towel to remove excess moisture
fresh parsley, minced
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Place a medium skillet on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the ham and onions, then saute until brown and caramelized. Remove them from the skillet.
In the same skillet, add bacon and cook until brown. Remove from the heat and crumble into small pieces.
In a microwavable bowl, add the box of frozen spinach and 2 tsp of water. Place it inside the microwave and heat for about 6 minutes.
Remove from the microwave, then transfer it into a colander. Allow it to cool at room temperature.
Place the spinach on paper towels, then press until most of the liquid is gone.
In a mixing bowl, add eggs and half & half. Whisk until well mixed.
Add the spinach, nutmeg, onions, bacon, ham, salt, and pepper. Stir until well mixed.
In the same colander, add the mushroom slices, then press them with paper towels to remove most of the liquid.
Add the mushroom slices and 1 cup of shredded cheese into the bowl with the egg mixture, then stir until well mixed.
Pour the egg mixture over the pie crust and spread it evenly.
Sprinkle a generous amount of cheese on top.
Place it inside the preheated oven and bake for about 45 minutes or until the top turns golden brown.
Remove the quiche from the oven and allow it to cool for a few minutes at room temperature.
Slice it into 8 even pieces.
Garnish each serving with freshly chopped parsley.
