Ingredients:
5 c chopped cauliflower florets
2 Eggs
½ c all-purpose flour
½ teaspoon baking powder
salt and pepper to taste
vegetable oil for frying
Directions:
In a food processor, add the cauliflower, then pulse until minced finely.
Put the minced cauliflower into a large bowl.
Add the eggs, flour, baking powder, salt, and pepper into the cauliflower. Stir until well combined. Add more flour if the texture is too wet.
Form ⅓-inch-thick patties out of the mixture.
Place a non-stick skillet on the stove and turn the heat to medium.
Add a bit of vegetable oil and allow it to become hot.
Add the patties and fry each side for 2 minutes or until they turn golden brown.
Remove from the skillet onto a clean plate lined with paper towels to drain any excess oil.
Serve warm with your favourite sauce. Enjoy!
Note:
I like serving these fritters with sour cream.
