Ingredients:
1 pound steamed broccoli florets
2 jumbo Eggs
½ c shredded Parmesan cheese
4 tablespoons flour
1 garlic clove, minced
salt and pepper, to taste
vegetable oil, for frying
Directions:
Place a medium pot with salted water on the stove and turn the heat to high, then allow the water to boil.
Add the broccoli florets and cook for 5 minutes or until they are tender.
Drain and place them onto a chopping board.
Slice the broccoli florets into small cuts.
Add the slices of broccoli, Parmesan cheese, eggs, garlic, salt, pepper, and flour into a mixing bowl. Stir until well mixed.
Place a skillet on the stove and turn the heat to medium.
Add oil and allow it to become hot.
Add about 3 tbsp of the broccoli mixture and use a spatula to flatten them out. Make sure to leave a space between each fritter.
Cook each side for about 3 minutes or until they turn golden brown.
Remove the fritters from the skillet onto a clean serving plate.
Serve hot with sour cream and enjoy!
Note:
Feel free to bake these fritters. The same procedures apply just bake them at 425 degrees F for about 10 minutes.
