Ingredients
For the sauce:
½ cup mayonnaise or light mayonnaise
½ cup Thai sweet chili sauce
2 cloves garlic minced
2 tbsp of lime juice
⅛ tsp crushed red pepper flakes
For the Pasta:
¾ – 1 lb thin spaghetti or angel hair pasta or gluten free pasta
1 ½ lbs medium shrimp peeled and deveined
1 tbsp coconut oil
3 cloves garlic minced
3 tsp paprika
1 tbsp dried parsley
freshly ground black pepper to taste
Directions
In a bowl, mix the sauce ingredients together and set aside then prepare the pasta according to the packaging and drain well.
Put the uncooked shrimp in a bowl and add the paprika, 3 cloves of garlic, pepper.
Heat the coconut oil on medium high heat and add the coated uncooked shrimp. Stir constantly while cooking until bright orange for approx. 7- 10 minutes.
Remove from heat and combine the pasta, shrimp and sauce mixture in a large mixing bowl and toss well.
Garnish with parsley and serve immediately.
