Ingredients:
2 cups sugar
¾ cup softened at room temp butter
2 Eggs
1 teaspoon vanilla extract
½ teaspoon banana extract
3 cups flour
1 teaspoon salt
1 ½ teaspoon baking powder
1 ½ teaspoon baking soda
½ cup milk
1 8ounces container of sour cream
3-4 ripe mashed bananas (about 1 ½ cups)
BANANA FROSTING
3 very ripe mashed bananas
1 teaspoon lemon juice
½ teaspoon vanilla extract
½ teaspoon banana extract
about 3 to 3 ½ cups powdered sugar
¼ to ½ c butter
milk for thinning
Directions:
Add all the dry ingredients into a large mixing bowl. Whisk until well combined.
Add milk and sour cream into a small mixing bowl. Stir until well mixed.
In another mixing bowl, add butter, cream, and sugar. Beat until well blended.
Add the eggs gradually and beat until well mixed.
Add the banana and vanilla extracts, then stir until well blended.
Add ⅓ of the flour mixture and ⅓ of the sour cream mixture, then beat until well blended.
Repeat the process until everything is mixed.
Add the mashed bananas and stir until well combined.
Apply cooking spray in a cake pan.
Transfer the batter into the prepared pan and spread it evenly.
Preheat the oven to 175 degrees C or 350 degrees F.
Place it inside the preheated oven and bake for about 25 minutes or until a toothpick comes out clean after inserting it in the middle.
Remove from the oven and allow it to cool completely at room temperature.
To Make the Banana Frosting:
In a medium mixing bowl, add the mashed bananas and lemon juice. Mash until well mixed.
Add vanilla extract, butter, cream, and banana extract. Stir until well mixed.
Add the confectioners’ sugar and beat until well mixed.
Add milk if the texture becomes too thick.
Spread the frosting over the cooled cake.
