Ingredients:
CRUST
4 cups
Nilla wafer crumbs
½ cup butter, melted
FILLING
1 small box, instant banana pudding, or ½ large box; prepared
CAKE
1 box white cake mix, plus oil & eggs per package directions
½ banana, mashed
2 teaspoons banana extract
FROSTING
2 cups heavy whipping cream
1-2 teaspoons clear vanilla extract
4 tablespoons powdered sugar
GARNISH
24 Nilla wafers
2 tablespoons raw sugar to sprinkle on top
Directions:
For the Crust:
Line with paper liners the muffin tins.
Add the melted butter and Nilla wafer crumbs into a food processor. Pulse until well combined.
Fill with 1 tbsp each of the cupcake liner. Press to create a crust.
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Place the crusts inside the preheated oven and bake for about 6 minutes or until they turn golden brown.
Remove from the oven and allow them to cool at room temperature.
For the Cake:
Refer to the directions provided on the package of the cake mix on how to prepare it.
Add the banana and banana extract, then stir until well combined.
Top each pie crust with the mixture.
Put them inside the oven and bake for a few minutes until done.
For the Filling:
Refer to the directions provided on the package on how to prepare it. Place it inside the fridge to chill.
Make a hole in the centre of each cupcake.
Fill each hole with the filling.
For the Frosting:
Add 2 cups of heavy cream into a large mixing bowl, then beat until it forms soft peaks.
Add vanilla and sugar, then beat until well blended.
Place it inside the fridge to chill for about 30 minutes.
Frost each cupcake, then sprinkle sugar on top.
Top each cupcake with a Nilla wafer. Enjoy!
