Ingredients:
2 tablespoons butter
4 boneless, skinless chicken thighs (about 1.25 pounds total)
2 cloves garlic, minced
¼ teaspoon dried thyme
4 tablespoons balsamic vinegar
1 tablespoon olive oil
8 ounces mushrooms
1.5 tablespoons soy sauce
A pinch of salt and pepper
1 tablespoon brown sugar
Directions:
Add soy sauce, balsamic vinegar, dried thyme, minced garlic, and brown sugar into a mixing bowl. Stir everything until well blended. Set aside.
Sprinkle salt and pepper over the chicken thighs, then toss until well coated on all sides.
Place a large skillet on the stove and turn the heat to medium.
Add olive and allow it to become hot. Make sure to evenly spread the oil around the skillet.
Add the chicken thighs into the hot skillet, then cook each side untouched for about 5 to 8 minutes or until they turn brown.
Transfer the chicken thighs onto a clean plate and cover them with something.
Slice each mushroom in half, then add them into the empty skillet and sauté for about 5 minutes or until brown.
Reduce the heat to medium-low, then add the balsamic sauce and scrape the bottom. Simmer for 5 minutes.
Add butter and allow it to melt.
Put the chicken thighs back into the skillet, then toss until well coated with the delicious sauce. Simmer for a few more minutes.
Serve right away. Enjoy!
