Tender-juicy chicken smothered with a delicious and cheesy sauce, what’s not to like? This Baked Salsa Chicken is total comfort food! A must-try recipe indeed. Enjoy!
Ingredients:
1-½ c Chunky Salsa (you can also use store-bought Chunky Salsa)
1 c shredded cheddar cheese, (I use a mix of white and yellow cheddar)
½ tsp paprika, or to taste
salt and fresh ground pepper to taste
4 boneless, skinless chicken breasts, pounded to an even thickness
1 tbsp olive oil
½ tbsp chili powder, or to taste
½ tsp ground cumin
½ tsp garlic powder
Directions:
Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Place a large skillet on the stove and turn the heat to medium.
Add olive oil and allow it to become hot.
Wrap each chicken breast with plastic, then gently pound with a meat mallet.
Sprinkle salt, pepper, garlic powder, cumin, paprika, and chili powder over the chicken breasts. Toss until well coated.
Add the chicken breasts into the hot skillet, then cook each side for about 2 minutes or until brown.
Add ½ cup of salsa into a baking dish and spread it to the bottom.
Add the chicken breasts over the sauce.
Pour the salsa on top of the chicken and spread it evenly.
Place the chicken inside the preheated oven and bake for about 30 minutes or until an instant-read thermometer inserted in one chicken breast reads about 165 degrees F.
Remove the chicken from the oven and sprinkle cheese on top.
Put the chicken back in the oven and bake for 3 more minutes or until golden brown.
Remove the chicken from the oven and allow them to rest for at least 5 minutes at room temperature.
