Ingredients:
Mac and Cheese
2 ½ c large elbow macaroni
½ tablespoon olive oil
4 tablespoons butter
1 tablespoon flour
2 c whole milk
2 12-oz cans of evaporated milk
1 ½ teaspoons salt
1 teaspoon pepper
2 ½ c mild cheddar cheese shredded (freshly grated if possible)
2 ½ c white sharp cheddar cheese shredded
Topping
4 tablespoons butter melted
1 c herb panko bread crumbs
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Apply cooking spray in a 9×13-inch baking dish.
Place a 5-quart pot on the stove, then add the macaroni and refer to the directions provided on the package on how to cook it.
Drain the macaroni, then drizzle olive oil right away and toss until well coated. Set aside.
Return the pot to the stove and turn the heat to medium-low.
Add butter and allow it to melt. Add the flour and whisk until well mixed. Cook for about a minute until the raw taste of the flour is gone. It should look a bit brown.
Add the 2 cups of whole milk and whisk until well mixed.
Turn the heat to medium-high, then add the 2 cans of evaporated milk, salt, and pepper. Whisk until well blended. Allow the mixture to boil, then simmer for about 10 minutes or until the texture becomes thick.
In a mixing bowl, add the cheeses and stir until well combined.
Add about 4 cups of cheese into the pot and stir until melted completely.
Remove the pot from the heat and add the cooked macaroni, then stir until well combined.
Transfer the mixture into the prepared baking dish and spread it evenly.
Sprinkle a generous amount of cheese on top.
In a mixing bowl, add the melted butter and Panko bread crumbs. Stir until well mixed.
Sprinkle the mixture on top of the mac and cheese.
Place it inside the preheated oven and bake for about 25 minutes or until the top turns golden brown.
Remove from the oven and let it rest for a few minutes.
Serve warm and enjoy!
