Ingredients:
⅓ c Extra Virgin Olive Oil
2 pt. Grape Tomatoes
8 ounces block of feta cheese
2-3 chopped Garlic Cloves
8 ounces box of pasta – I recommend Cavatappi
kosher salt
cracked pepper
Fresh basil bunch – about ⅓rd c
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Add about 2 pints of the cherry tomatoes into a casserole dish and spread it evenly.
Add the feta cheese block in the middle of the arranged tomatoes.
Sprinkle salt and pepper over the cheese and tomatoes.
Drizzle ⅓ cup olive oil to the sides of the casserole dish as well as on top of the tomatoes and cheese
Sprinkle freshly chopped basil leaves on top.
Place it inside the preheated oven and bake for about 30 minutes or until done.
Refer to the directions provided on the package of the pasta on how to cook it. Drain.
Remove the casserole dish from the oven, then scatter the chopped garlic as well as parsley on top.
Add ½ of the pasta into the casserole dish, then stir until well combined with the tomatoes and cheese.
Add the rest of the pasta and stir again until well combined.
Serve and enjoy!
