2 tbsp olive oil
½ c whole berry cranberry sauce
2 tbsp fresh thyme leaves
1 wheel of brie about 12 oz, top of rind removed (use triple cream if you can)
Fresh ground pepper
Kosher salt
1 bread boule round loaf of rustic bread
Directions:
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Slice the top part of the bread. Run a knife in a circular pattern around the bread. Remove the inner part from the middle.
Make 1.5-inches sides apart around the bread, then slice it into 3/-inch.
Brush the inside of the bread with olive oil, then sprinkle salt and pepper to season.
Sprinkle ½ of the thyme and put the brie wheel in the centre, then sprinkle more thyme on top.
Spoon the cranberry sauce over the brie.
Place the bread inside the preheated oven and bake for about 20 minutes.
Remove from the oven and allow it to rest for a few minutes at room temperature.
Serve and enjoy!
