Ingredients:
8 bone-in, skin-on chicken thighs or 8 boneless, skinless chicken thighs
Spice blend for both types of chicken thighs
1 teaspoon garlic powder
½ teaspoon each salt & pepper
1 teaspoon paprika
1 teaspoon onion powder
An optional side dish of mixed veggies
1 carrot, thinly sliced
1 head broccoli, chopped
1 zucchini, sliced
Directions:
For the Skin-On Thighs:
Prepare the oven and preheat to 425 degrees F.
In a mixing bowl, add all the ingredients for the spice blend. Whisk everything until well incorporated.
Use paper towels to pat dry the chicken thighs, then sprinkle the spice blend over and toss until well coated.
Line parchment paper onto a baking sheet.
Place the chicken thighs onto the prepared baking sheet and arrange them in a single layer.
Place the baking sheet inside the preheated oven and bake the chicken thighs for about 25 to 35 minutes.
Turn the chicken and broil for another 2 minutes over high heat.
Remove from the oven and allow them to rest for a few minutes at room temperature.
Serve warm and enjoy!
For the Skinless Thighs:

Notes:
You can veggies to this dish if you wish. Just toss them with ½ teaspoon salt and 1 tbsp olive oil. Cook them with the chicken for 10 minutes.
