These Baked Chicken Taquitos are the best thing I’ve made in weeks! These are freezer-friendly and perfect for quick dinners. Enjoy crispy baked chicken taquito with chicken and melty cheese filling with this easy recipe any time!
INGREDIENTS
2 c. chopped or shredded cooked chicken (about 1 lb.)
3 oz. cream cheese (softened to room temperature)
1 tsp chili powder
½ tsp cumin
⅓ c. salsa
¼ tsp garlic powder
12 small whole-grain tortillas
1 c. shredded Monterey jack and/or cheddar cheese (4 oz.)
kosher salt
olive oil spray
How to make Baked Chicken Taquitos
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: Place the cream cheese, salsa, chili powder, cumin, and garlic powder in a large bowl. Mix well, then stir in the shredded cheese and chicken until well blended.
Step 3: In the microwave, warm the tortillas for a couple of seconds as needed.
Step 4: In a line across the lower third of each tortilla, place 3 tbsp of the chicken mixture. Tightly roll the tortillas one at a time and place them on a parchment paper-lined baking sheet, seam-side-down.
Step 5: Do the same with the rest of the tortillas and filling.
Step 6: Using olive oil, lightly spray the taquitos and sprinkle with salt.
Step 7: Place in the preheated oven and bake for about 15 minutes or until the taquitos are lightly browned.
Step 8: Remove from the oven when done and serve the Baked Chicken Taquitos with salsa, guacamole, and/or plain Greek yogurt (or sour cream) for dipping. Enjoy!
NOTES:
To freeze, flash freeze the taquitos before baking them in a single layer on a baking sheet or baking dish. In a labeled freezer bag, transfer the taquitos and keep them in the freezer for up to 3 months.
When ready to serve, bake the frozen taquitos for about 16 to 20 minutes at 375 degrees F until heated through and golden.
