This will be the perfect food to serve when you are having guests over. Oh, man, you are so in for a treat! Feel free to add more ingredients if you wish. Enjoy!
Ingredients:
1 tbsp olive oil
½ lb cooked chicken shredded (I used cooked Rotisserie chicken)
1 oz Taco Seasoning
½ c onion diced
1 can diced tomato 14.5 oz, fully drained
1 can Chop Green Chiles
4.5 oz, fully drained
10 Stand and Stuff Taco Shells
8 oz Refried Beans ½ can
2 c Mexican Blend Cheese shredded
Toppings such as Old El Paso sliced Jalapenos, sour cream, salsa, chopped cilantro, shredded lettuce, or any of your favourite taco toppings!
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Apply cooking spray in a 9×13-inch baking dish.
Step 3: Place a medium skillet on the stove and turn the heat to medium.
Step 4: Add in olive oil and allow it to become hot.
Step 5: Add in the onion and sauté for about 3 minutes or until translucent.
Step 6: Add in the chicken, tomatoes, green chilli, and taco seasoning. Stir until well combined, then simmer for 8 minutes.
Step 7: In a baking dish, arrange the taco shells standing up.
Step 8: Place the baking dish inside the oven and bake for about 5 minutes or until crisp.
Step 9: Remove the taco shells from the oven.
Step 10: Add 1 tablespoon of beans in each taco shell and put it on the bottom.
Step 11: Top the taco shells with the chicken mixture and sprinkle a generous amount of cheese on top.
Step 12: Place it inside the oven and bake for 7 to 10 minutes or until brown and cheese has melted completely.
Step 13: Remove from the oven and put whatever toppings you prefer.
Step 14: Serve and enjoy!
