Ingredients:
6 Extra Thin Corn Tortillas, I used Mission
6 ounces Cooked Chicken Breast, chopped or shredded (or your choice of filling)
½ cup (56g) Shredded Cheddar, or your choice of cheese
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Wrap with a damp paper towel the tortillas.
Step 3: Place the wrapped tortillas inside the microwave and heat for 45 to 60 seconds. Make sure to turn the tortillas after about 30 seconds.
Step 4: Fill each tortilla with chicken and peppers.
Step 5: Sprinkle cheese on top, then fold each over.
Step 6: Seal each taco by pressing it gently. (If a tortilla has a tear, heat it again in the microwave for about 15 to 30 seconds.)
Step 7: Arrange the tacos on a baking sheet, then press them down.
Step 8: Place the baking sheet inside the preheated oven and bake for about 8 to 12 minutes or until the tortillas turn golden brown.
Step 9: Remove the tacos from the oven and let them sit on a wire rack at room temperature to cool.
Step 10: Serve and enjoy!

To reheat, just simply place them inside the oven and bake for 2 to 4 minutes or until warm and crispy.
