Ingredients:
Brine:
water
¼ c salt
Chicken & Seasoning:
3 tbsp olive oil (or melted butter)
½ tsp dried thyme
½ tsp onion powder
½ tsp dried basil
4 chicken breasts (boneless skinless, about 3-4 lbs.)
1 tsp Italian seasoning
1 tsp paprika (regular or smoked)
½ tsp dried parsley
¼ tsp pepper flakes (optional)
1 tsp garlic powder
½ tsp salt
¼ tsp black pepper
Garnish:
chopped parsley
Directions:
To Brine:
Add ¼ cup of salt into a large mixing bowl, then pour in 1-quart of lukewarm water. Stir until well blended.
Add the chicken breasts into the brine and submerge them. Allow the chicken breasts to rest for at least 30 minutes.
Otherwise, place the bowl inside the fridge for 6 hours. Rinse with water and use paper towels to pat them dry.
For the Chicken and Seasoning:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Apply cooking spray in a 9×13-inch baking dish.
Add the Italian seasoning, garlic powder, paprika, dried thyme, onion powder, dried parsley, pepper flakes, dried basil, salt, and pepper into a mixing bowl. Stir until well combined.
Rub with olive oil all over the chicken breasts, then sprinkle with the mixed seasoning.
Arrange the chicken breasts into the greased baking dish in a single layer.
Place them inside the preheated oven and bake for about 30 minutes or until they turn golden brown.
