Ingredients:
¼ c cornmeal or bread crumbs or ground oats also work
a few grinds of black pepper
½ tsp of ground mustard
1 Egg
4 ounces shredded sharp cheddar cheese (about 1 c)
1 tsp kosher salt
3 c shredded cauliflower (about half of a head)
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Apply cooking spray to a mini muffin tin.
Wrap the shredded cauliflower with a kitchen towel, then squeeze it to remove most of the liquid.
In a large mixing bowl, add all the ingredients for the Baked Cauli-Tots and stir everything with a fork until well incorporated.
Fill each cup of the prepared muffin tin with the mixture, then press each towards the bottom.
Place the muffin tin in the preheated oven and bake the Baked Cauli-Tots for about 20 to 25 minutes or until they turn golden brown.
Remove the Baked Cauli-Tots from the oven and allow them to rest for a few minutes at room temperature before serving.

Notes:
It is important to grease the muffin tin.
Feel free to use bread crumbs or ground oats in exchange for cornmeal.
