Ingredients:
For the Potatoes:
2 tbsp olive oil
¼ tsp fresh ground black pepper
1 lb. small Yukon gold potatoes, quartered
½ tsp salt
For Balsamic Reduction:
2 tbsp brown sugar
⅓ c balsamic vinegar
For the Chicken:
1 tsp olive oil
¾ tsp salt
2 tsp balsamic vinegar
¼ tsp salt
½ tsp fresh ground black pepper
4 boneless, skinless chicken breasts
1 c cherry tomatoes, halved
fresh mozzarella cheese balls, for serving, optional
For the Tomatoes
sliced fresh basil, for serving
Directions:
Prepare the oven and preheat to 425 degrees F.
Line aluminium foil onto a large rimmed baking sheet then coats it with cooking spray.
Add the potatoes, salt, pepper, and olive oil into a large mixing bowl. Toss until the potatoes are well coated.
Lay the potatoes onto the prepared baking sheet and arrange them in a single layer.
Place the baking sheet in the preheated oven and roast the potatoes for about 15 minutes.
Place a saucepan on the stove, then add the balsamic vinegar. Turn the heat to medium and let it boil.
Add brown sugar into the balsamic vinegar, then stir until dissolved. Let it boil for another 3 minutes or until thick. Remove the pan from the heat. Reserve about 1 tbsp of the mixture for later use.
Coat the chicken breasts with oil, then sprinkle salt and pepper. Rub each until well coated. Lay chicken breasts over the potatoes.
Brush the balsamic vinegar on top of the chicken breasts.
Place the baking sheet in the preheated oven and bake the chicken for about 20 minutes.
In a mixing bowl, add the reserved balsamic vinegar, salt, oil, and tomatoes. Stir until well mixed.
Remove the baking sheet from the oven and brush the glaze over the chicken.
Place the tomatoes around the potatoes and chicken. Bake for 5 more minutes.
Top with the reserved balsamic vinegar, cheese, and basil.
