This Bacon Cheese Jalapeno Quick Bread is a tasty addition to any lunch, breakfast, or afternoon snack!
Ingredients
1 egg
12-14 slices of cooked good quality bacon crumbled
3 c. flour
1 tablespoon baking powder
1 tablespoon sugar
2 c. shredded cheese I use 1 cup Monterey Jack and 1 c. cheddar, I have also done ½ Mozzarella and ½ cheddar
4 ounces of cream cheese at room temperature
2 jalapenos, diced (remove seeds for less heat)
1 tablespoon melted butter
¼ tsp salt
1 ½ c. whole milk
2 scallions, sliced thin optional
How to make Bacon Cheese & Jalapeno Quick Bread
Step 1: Prepare the oven. Preheat it to 350 degrees. Ready a 9 x 5 or 9 x 6-inch loaf pan. Grease and set aside.
Step 2: In the meantime, cook the bacon until crisp. Drain the grease. Once the bacon is cool enough to handle, crumble, and set aside.
Step 3: Combine the flour, salt, baking powder, and sugar until well mixed and set aside.
Step 4: Place the cream cheese, shredded cheese(s), jalapenos, and scallions into the main bowl. Add the bacon and mix well until combined.
Step 5: To the cheese mixture, add the flour mixture, egg, milk, and melted butter. Mix well until blended.
Step 6: Pour the batter into the prepared loaf pan. Place in the preheated oven and bake for about 45 to 50 minutes or until a toothpick inserted in the center of the bread comes out clean.
