Ingredients:
½ c Parmesan Cheese, grated
2 slices of Bacon, chopped
2 tablespoons Oil for frying
3 cloves Garlic, minced
1.5 c Heavy cream
2 c Potatoes, red or creamer, cut up into small chunks
2 c Spinach
⅓ c Sun-Dried Tomatoes, cut into strips
1 tsp Sweet paprika
Salt & pepper to taste
6 Chicken Thighs
Parsley for garnish

Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
Add 1 tsp of salt and the potatoes, then cook for about 15 minutes. Drain.
Place a cast-iron skillet on the stove and turn the heat to medium-high.
Add oil and allow it to become hot.
Sprinkle sweet paprika, salt, and pepper over the chicken, then toss until well coated.
Place the chicken into the hot skillet, then sear each side for about 3 minutes or until brown. Transfer onto a clean plate.
In the same skillet, leave about 1 tbsp of the oil and discard the rest.
Add garlic and sauté for about a minute or until aromatic.
Add heavy cream and stir until well blended. Simmer for 5 minutes or until the texture becomes thick.
Add the sun-dried tomatoes and spinach, then stir until well combined.
Remove the skillet from the heat, then add Parmesan cheese, salt, and pepper and stir until well blended.
Apply cooking spray to a large casserole.
Place the potatoes into the prepared casserole, then spread the sauce over them.
Place the chicken over the sauce.
Place the casserole in the preheated oven and bake for about 45 minutes or until done.
Remove the casserole from the oven.
Cook the bacon until crispy, then scatter them over the chicken and potatoes.
Garnish with freshly chopped parsley.
