Ingredients:
4 tbsp butter, softened
nonstick cooking spray
3 tbsp olive oil
1 ½ lbs. of baby potatoes cut in half lengthwise
2 tbsp freshly minced chives
¼ c hoisin sauce
1 lb. green beans, stems trimmed
kosher salt and freshly ground pepper
1 garlic clove, minced into a paste
2 1 lb. pork tenderloins, trimmed
Directions:
Preheat the oven to about 225 degrees C or 450 degrees F.
Place the oven rack in the center of the oven.
Apply cooking spray to a heavy-duty baking sheet. Make sure to coat the inside with it.
Add 1 tbsp of olive oil, green beans, ¼ tsp freshly ground pepper, and ¼ tsp kosher salt into a large bowl. Toss the beans until completely coated with the oil, salt, and pepper. Transfer everything onto the greased baking sheet and spread them evenly in the middle.
Add ¼ tsp freshly ground pepper, ¼ tsp kosher salt, 2 tbsp olive oil, and potatoes into the same bowl where you mixed the green beans, then toss the potatoes until completely coated as well.
Scatter the potatoes around the green beans onto the baking sheet.
Place the tenderloins on top of the green beans, leaving a small space between each piece.
Brush each tenderloin with hoisin sauce. Add salt and pepper to taste.
Place the baking sheet in the preheated oven and roast the tenderloin for about 20 to 25 minutes or until done.
Add garlic, ¼ pepper, ¼ salt, chives, and butter into a mixing bowl. Stir until well incorporated.
Remove the pan from the oven, then top each tenderloin with the garlic mixture.
Serve right away. Enjoy!
