Ingredients
2 large eggs, beaten
1 stick butter, melted
1 can of whole kernel corn, drained
2 tbsp granulated sugar
1 can creamed corn
2 c. all-purpose flour
½ c. shredded cheddar cheese
1 c. whole milk
¼ tsp each salt and pepper, to taste
¼ c. diced red pepper
How to make Awesome and Easy Creamy Corn Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees. Using nonstick cooking spray, lightly grease a 9 x 13-inch casserole dish. Or use a 10-inch cast-iron skillet.
Step 2: In a large bowl, place all the ingredients except for the cheddar cheese. Mix well until everything is blended.
Step 3: Into the prepared casserole dish, transfer the mixture. Place in the preheated oven and bake for about 45 minutes, uncovered.
Step 4: Remove from the oven and sprinkle the cheddar cheese on top. Resume baking the casserole for an additional 10 to 15 minutes until the top starts to brown.
Step 5: Take the casserole out of the oven when done and let it cool for about 6 minutes before serving. Enjoy!
Tips:
Place any leftovers in a storage container or tent them using plastic wrap before storing them in the fridge.
I do not recommend making this casserole ahead as this tastes much better when eaten fresh. But any leftovers will stay good for up to 3 months in the freezer. Before serving, thaw in the fridge and reheat.
