Ingredients:
1-lb spaghetti pasta
1 tbsp salt
1 lb thick-cut bacon or pancetta diced
4 Egg yolks
2 whole Eggs
1 ½ c grated pecorino Romano cheese divided
½ tsp freshly ground pepper
2 tbsp freshly chopped parsley to garnish
Directions:
Step 1: Place a large pot with salted water on the stove and turn the heat to high. Allow the water to boil.
Step 2: Add the pasta noodles and cook until al dente. Set aside 1 ½ cups of the water, then drain the pasta to stop the cooking process.
Step 3: Place a large saucepan on the stove and turn the heat to medium.
Step 4: Add bacon/pancetta and cook for 7 to 10 minutes or until crispy.
Step 5: Set aside 2 tablespoons of the bacon grease and drain the bacon.
Step 6: In a medium mixing bowl, add the eggs, 1 cup of pecorino Romano cheese, and egg yolks. Whisk until well combined.
Step 7: Add the cooked pasta into the pan with the bacon.
Step 8: Add the reserved bacon grease, pasta water, and egg mixture. Toss for about 2 minutes or until well combined.
Step 9: Sprinkle the rest of the cheese, parsley, and ground pepper on top.
Step 10: Serve and enjoy!
