This recipe has always been a part of my life since I was little. This was my aunt Leah’s recipe that she passed on to me. Now, allow me to share it with you as well. I have listed all the things you will be needing so all you need to do is to follow them step by step for they will guide you to perfection! As perfect as this recipe already is, feel free to add more ingredients if you prefer. I am sure that you can do a lot to take this recipe to the next level! Ingredients:
6 strips bacon
2 tbsp brown sugar
1 tbsp grainy Dijon mustard
1 ½ lbs. pork tenderloin
3 tbsp apricot preserves
1 tbsp Cajun seasoning
Directions:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Coat the pork tenderloin with brown sugar and Cajun seasoning mixture. Make sure to coat it well.
Wrap tenderloin with the bacon slices.
Place an oven-proof skillet on the stove and turn the heat to medium.
Add the tenderloin wrapped with bacon, then cook for 10 to 15 minutes on each side until it turns golden brown.
Place it inside the preheated oven and bake for about 15 minutes. Make sure to brush it with mustard and apricot preserves.
Remove from the oven and allow it to rest for at least 5 minutes at room temperature.
Serve and enjoy!
