Ingredients:
1 ½ lb pork tenderloin
1 tbsp Cajun seasoning
2 tbsp brown sugar
6 strips bacon
3 tbsp apricot preserves
1 tbsp grainy Dijon mustard
Directions:
Step 1: In a small mixing bowl, add the Cajun seasoning and brown sugar. Whisk until well combined.
Step 2: Coat the pork tenderloin generously with the Cajun-sugar mixture and wrap it with the bacon slices.
Step 3: Place a skillet on the stove and turn the heat to medium.
Step 4: Add in the pork tenderloin wrapped in bacon and cook all sides for about 10 to 15 minutes or until everything is brown.
Step 5: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 6: Remove the pan from the heat and place it inside the preheated oven. Roast the pork for about 15 minutes or until it reaches a temperature of 140 degrees F.
Step 7: About 5 minutes after roasting time ends, brush the pork with the sauce.
Step 8: Remove from the oven and allow it to cool at room temperature.
Step 9: Slice into small cuts.
