Oh, my! These Apple Enchiladas are superb! I am so satisfied right now. I have a few leftovers and I am planning on eating them later! Try this recipe and prepare to fall in love! Ingredients:
21 ounces can apple [pie filling
6 8″ tortillas
1 teaspoon cinnamon
½ cup butter
½ cup white sugar
½ cup brown sugar
½ cup water
Directions:
Apply cooking spray in a 9×13-inch casserole dish.
Add ¼ cup of pie filling in the middle of each tortilla.
Sprinkle cinnamon over each filling.
Roll each tortilla, then tuck the sides.
Arrange them into the prepared casserole dish. Make sure to leave a space between each enchilada.
Place a saucepan on the stove and turn the heat to medium.
Add butter, water, brown sugar, and white sugar. Stir until well combined. Allow the mixture to boil. Make sure to stir from time to time.
Turn the heat down to low, then simmer the mixture for about 3 minutes.
Pour the sauce on top of the enchiladas and spread it evenly.
Allow the sauce to incorporate with the enchiladas for about 45 minutes.
Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Place the enchiladas inside the preheated oven and bake for about 20 minutes or until they turn golden brown.
Remove from the oven and allow them to cool for a few minutes at room temperature.
Serve with vanilla ice cream. Enjoy!
