Ingredients
21 ounces can apple pie filling
6 8-inch tortillas
1 teaspoon cinnamon
½ cup butter
½ cup white sugar
½ cup brown sugar
½ cup water
How to make Apple Enchiladas
Step 1: Evenly add a heaping quarter of pie filling on the centre of each tortilla and sprinkle with cinnamon.
Step 2: Roll the tortillas and tuck the edges. Transfer the rolled tortillas seam side down into the prepared dish.
Step 3: Combine the butter, white sugar, brown sugar and water in a medium saucepan. Let the mixture boil while constantly stirring.
Step 4: Adjust the heat to low and continue to simmer for 3 minutes.
Step 5: Pour the sauce over the enchiladas and let it rest for about 45 minutes.
Step 6: Place inside the oven and bake for about 20 minutes at 350 degrees or until golden.
Step 7: Once done, remove from the oven and serve the enchiladas with a big scoop of vanilla ice cream or as a side dish to ham. Enjoy!
