INGREDIENTS
1 clove garlic, grated
1 c. zucchini, grated
⅓ c. breadcrumbs
1 large egg, beaten
½ c. Parmesan cheese, freshly grated
2 tbsp fresh chives, minced
½ tsp salt
½ tsp black pepper
1 tbsp fresh parsley, finely chopped
How to make Zucchini Garlic Bites
Step 1: Prepare the oven. Preheat it to 400 degrees F. Using the parchment paper, line a rimmed baking sheet and set aside.
Step 2: To a clean towel, place the grated zucchini. Then, bundle up the towel and squeeze out any excess moisture.
Step 3: To a large bowl, transfer the squeezed zucchini. Add the garlic, egg, breadcrumbs, Parmesan, chives, parsley, salt, and pepper. Stir well until blended.
Step 4: Form 1 tbsp of the mixture into a ball. Repeat with the remaining mixture. On the prepared baking sheet, place the balls.
Step 5: Place in the preheated oven and bake for about 15 to 18 minutes or until golden brown.
Step 6: Remove from the oven when done and serve the zucchini, garlic bites with Ranch or marinara sauce for dipping. Enjoy!
