This Stuffed Pork Tenderloin is loaded with amazing flavors! Each bite will surely satisfy all your cravings! This is my family’s all-time favorite food.
Ingredients:
4 tablespoons olive oil, divided
1 ½ teaspoons sea salt, divided
2 slices of bacon, chopped
1 ½-pound pork tenderloin, silver skin removed
¼ c fresh parsley, chopped, plus more to garnish
6 ounces brown mushrooms, thinly sliced
⅓ c onion, chopped, (from ½ small onion)
½ teaspoon black pepper, divided
1 garlic clove, minced
Directions:
For the Stuffing:
Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Place a large oven-proof skillet on the stove and turn the heat to medium. Add 2 tablespoons of oil and allow it to become hot.
Add the chopped bacon into the skillet, then cook for a few minutes until crispy.
Add the onions and mushrooms, then sauté for a few minutes or until soft.
Add minced garlic, ¼ tsp black pepper, chopped parsley, and ½ tsp salt. Sauté for about a minute or until aromatic. Empty the skillet onto a clean plate.
To Stuff the Pork Tenderloin:
Remove and discard the silver thing that coats the tenderloin, then slice it to make it look like a book.
Wrap each with plastic, then use a meat tenderizer to gently pound it to about ½-inch thick.
Spread the mushroom mixture over the prepared tenderloin, then roll it up and secure it with toothpicks.
Sprinkle ¼ tsp pepper and ½ tsp of salt all over the meat, then rub it until coated.
In the skillet over medium heat, add 2 tbsp of oil and allow it to become hot.
Add the pork tenderloin into the hot skillet, then sear side for about 2 minutes or until just brown.
Remove the skillet from the heat and transfer it to the preheated oven. Bake the pork tenderloin for about 18 to 20 minutes.
Remove from the oven and transfer the pork tenderloin onto a chopping board.
Brush the tenderloin with the drippings from the skillet and let it rest for a few minutes at room temperature.
