If you have never tried Spanakopita, this is the perfect time to give it a go! This is a traditional Greek dish easily made using phyllo dough and filled with amazing spinach and feta filling. Serve this delicious Spanakopita as an appetizer or a light lunch option as a side to ham or lamb.
Ingredients
Dough:
1 c. olive oil
16 oz. phyllo dough
Filling:
2 tablespoons olive oil
1 yellow onion finely diced
20 oz. frozen spinach thawed and drained
12 oz. feta
1 ½ c. Parmesan cheese grated
1 bunch parsley minced
3 garlic cloves minced
3 large eggs
¼ tsp red pepper flakes
½ teaspoon kosher salt
How to make Spanakopita
Step 1: Prepare the oven. Preheat it to 325 degrees F. Using olive oil, grease the bottom and sides of a 9 x 13-inch baking pan.
Step 2: After rolling the thawed phyllo dough, tent it with a stack of lightly damp paper towels. This will prevent the dough from drying out. Cut off the end of the dough if it is a lot longer than your baking dish.
Step 3: In the bottom of the pan, place two pieces of dough. Then, generously grease them with olive oil. Do the same process with the remaining 8 sheets of dough.
Step 4: In a large mixing bowl, whisk the filling ingredients until well combined. On top of the dough, spread the mixture out. Make sure to brush the dough every two layers, brushing the top layer and adding a couple of drops of water over it.
Step 5: Cut through the top layer of the dough using a large sharp knife in your preferred size, making sure not to cut to the bottom.
Step 6: Place in the preheated oven and bake for about an hour until the top layer is flaky golden brown. Before serving, finish slicing the Spanakopita into pieces.
Notes:
Refrigerate the frozen dough for 12 hours before using it for the best results.
Make sure to thaw the spinach completely, then squeeze as much water from them as you can using a cheesecloth.
You can prep the dish ahead and keep it in the fridge for up to 1 day before baking.
In an airtight container, keep any leftovers and store them in the fridge for up to 2 days.
To reheat, pop in the oven and reheat at 350 degrees F until completely heated.
