This Slow Cooker Greek Chicken will take you more than 3 hours to cook. It is something worth waiting for! Enjoy a quality dish in the comfort of your home! Dinner will be very special with this. Enjoy!
Ingredients:
1 tbsp minced garlic from about 3 large cloves
¼ tsp ground black pepper
1 c Kalamata olives, drained
1 jar roasted red peppers (12 oz), drained and chopped
1 tsp dried thyme leaves
3 tbsp red wine vinegar
Chopped fresh herbs: any mix of basil, parsley, or thyme, optional for serving (I used fresh thyme)
1 tbsp extra-virgin olive oil
½ c feta cheese, optional for serving
2 lbs. boneless, skinless chicken breasts or thighs
1 tsp honey
1 tsp dried oregano
½ tsp kosher salt
1 medium red onion, cut into ½-inch chunks
Directions:
Season the chicken with salt and pepper.
Apply cooking spray to a 5-quart slow cooker.
Place a large skillet on the stove and turn the heat to medium.
Add chicken into the hot skillet, then sear each side for about 2 minutes or until golden brown.
Remove the chicken from the skillet and move them into the slow cooker.
Scatter olives, onions, and pepper around the chicken in the slow cooker.
Add thyme, oregano, red wine vinegar, garlic, and honey into a bowl. Stir until well blended. Pour it over the chicken.
Cover and seal the slow cooker, then cook for 1 ½ hours to 2 hours on a high setting or 3 to 4 hours on a low setting.
Sprinkle your preferred herbs on top together with feta cheese.
Serve and enjoy!
Notes:
Place any leftovers in an airtight container, then put them in the fridge. They can last up to 4 days. Reheat for a few minutes before serving again.
