A complete meal in a pan with rice, onions, red bell pepper, green chiles, corn, cream of celery soup, and pepper jack cheese. This dish is also freezer-friendly. Make this ahead for an even quicker meal, excellent for busy weeknights.
I have made this Pepper Jack Rice Bake a few times. It’s a great dish that is already a full meal on its own. If desired, you can also add ground chicken or beef. This easy Pepper Jack Rice Bake is always a hit! A must try and for keeps!
Ingredients
2 tbsp oil
1 (8 oz.) container of sour cream
6 cups cooked rice
1 medium red bell pepper, chopped
1 medium onion, chopped
2 cups shredded Pepper Jack cheese
2 (4.5 oz.) cans of chopped green chiles
1 (10.75 oz.) can of cream of celery soup
1 cup corn kernels, fresh or frozen
salt and pepper
HOW TO MAKE PEPPER JACK RICE BAKE
Step 1: Ready the oven and preheat it to 375 degrees F. Lightly grease a 9 x 13 x 2-inch baking dish using cooking spray.
Step 2: Heat the oil in a large skillet over medium-high heat. Then, add the bell pepper and onion and cook for about 8 minutes until softened.
Step 3: Combine the cooked rice, sour cream, soup, green chiles, corn, cooked pepper, onion, and half of Pepper Jack cheese until well blended. Transfer and evenly spread the mixture into the prepared pan.
Step 4: Tent with foil and bake in the preheated oven for about 30 minutes. Then, remove the cover and sprinkle it with the remaining Pepper Jack cheese. Return to the oven and continue baking for 10 minutes more.
Notes:
Feel free to use any cream of soup for this recipe.
You can also use your desired cheese.
For this recipe, you can use any type of cooked rice (6 cups).
