Ingredients:
1 teaspoon minced garlic
1 tablespoon water
2 pounds boneless, skinless chicken breast
½ teaspoon black pepper
1 egg
2 tablespoons olive oil
4 tablespoons butter
½ teaspoon salt
2 c Shredded Parmesan Cheese
Directions:
Slice the chicken breasts in half, then wrap each with plastic. Use a meat mallet to gently pound each to about ½-inch thick.
Put water, egg, garlic, salt, and pepper into a mixing bowl, then beat until well blended.
In another mixing bowl, add Parmesan cheese.
Dredge each chicken into the bowl with the egg mixture, then into the Parmesan cheese. Toss until well coated and shake off any excess.
Place a large skillet on the stove and turn the heat to high. Add oil and butter.
Add the chicken to the hot skillet, then cook each side for about 3 minutes or until they turn golden brown.
Transfer the Parmesan Crusted Chicken onto a clean serving plate and let them rest for a few minutes to incorporate all the flavors.
