Ingredients:
For Chicken Skewer:
2 c Assorted pepper, cut into cubes
Salt and Pepper as per taste
2 teaspoons cooking oil
1 large onion Cut into cubes
10-12 Wooden Skewers (Soaked in water for 15 minutes)
2 Boneless Chicken Breast
For Teriyaki Sauce:
¼ c low Sodium Soy Sauce
1 tsp Ginger Juice (grate fresh ginger and squeeze the juice)
2.5 tbsp honey
½ tablespoon minced garlic
1 tsp Cornstarch
1 tbsp Rice Wine vinegar Or Sake
2 tbsp Water
Directions:
Add all the ingredients for the sauce into a mixing bowl, then stir everything until well blended.
In another mixing bowl, add onions, peppers, boneless chicken cubes, salt, pepper, and 2 tbsp of the sauce. Stir everything until the chicken cubes are well coated.
Cover the bowl with plastic, then place it in the fridge to marinate the chicken for at least half an hour.
Remove from the fridge, then use the skewers to thread the chicken, pepper, and onions together.
Place the pan on the stove and add the rest of the sauce. Turn the heat to low and allow it to become hot.
Add the slurry (water and cornstarch mixture) and stir until well blended. Simmer the sauce for a few minutes until the texture becomes thick. Remove from the heat.
Preheat the grill.
Place the skewers over the preheated grill and cook each side for about 3 to 4 minutes while basting from time to time.
Serve the grilled chicken with the prepared delicious sauce. Enjoy!
