Ingredients:
2 tbsp unsalted butter
6 cloves garlic, minced
1 tbsp olive oil
½ c fresh grated Parmesan cheese
2 tbsp fresh chopped parsley
½ c dry white wine or chicken broth
1 lb. (500g) shrimp, tails on or off
1 ½ c reduced fat cream
Salt and pepper, to taste
Directions:
Place a large skillet on the stove and turn the heat to medium-high.
Add oil and allow it to become hot.
Sprinkle salt and pepper over the shrimp, then toss until well coated.
Add the seasoned shrimp into the hot skillet, then cook each side for about 2 minutes or until done.
Remove the shrimp from the skillet and transfer them onto a clean plate.
In the empty skillet, add butter and allow it to melt.
Add the garlic, then sauté for a minute or until aromatic.
Add wine, then scrape the bottom of the skillet to get the browned bits. Simmer for a few minutes until it reduces its volume to 1/2/.
Turn the heat down to low-medium, then add cream and stir until well blended. Simmer for a few more minutes. Add salt and pepper to season.
Sprinkle the Parmesan cheese, then stir until melted completely. Simmer until the texture of the sauce becomes thick.
Put the shrimp back into the skillet, then toss until well coated with the delicious sauce.
Sprinkle freshly chopped parsley on top to garnish.
Serve right away over rice, steamed veggies, or pasta. Enjoy!
Notes:
