Ingredients:
2 c heavy cream (or 16 ounces)
2 tbsp olive oil
1 lb. boneless, skinless chicken breast
1 c tomatoes, diced
10 oz. dry pasta (any kind)
½ c Parmesan cheese, shredded or grated
1 tbsp butter
1 tsp Italian seasoning
1 tsp paprika
1 tsp garlic powder
2 c spinach, chopped, optional
salt & pepper to taste
4 cloves garlic, minced
Directions:
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil. Add the pasta and refer to the directions provided on the package on how to cook it. Drain and set aside.
Sprinkle paprika, salt, pepper, garlic powder, and Italian seasoning over the chicken breasts. Toss until well coated.
Place a heavy-duty pan on the stove and turn the heat to medium-high.
Add olive oil and allow it to become hot.
Add the chicken breasts into the hot pan, then cook each side for 5 minutes or until brown. Transfer the chicken onto a clean plate.
In the same empty pan, add butter and allow it to melt.
Add garlic into the pan, then sauté for a minute or until aromatic.
Add the spinach and tomato, then cook for 3 minutes or until wilted and soft.
Turn the heat down to low, then add Parmesan cheese and heavy cream. Stir until well blended. Add salt and pepper to taste.
Slice the chicken into small pieces.
Add the chicken slices and cooked pasta into the pan, then toss until well coated with the delicious sauce. Garnish with your preferred herbs.
