Ingredients:
2 tbsp unsalted butter
1 tsp Smoked Paprika (for seasoning chicken)
¼ tsp Salt and Pepper (each for seasoning chicken)
4 Chicken Breasts (boneless & skinless)
Creamy Paprika Sauce:
2 c fresh spinach
½ c heavy cream
½ tsp salt
4 cloves garlic, minced
1 tbsp flour (sifted)
½ c dry white wine
1 tbsp butter
1 tsp fresh lemon juice (juice of squeezed, lemon)
1 tsp paprika
½ c chicken broth (sodium-free)
Directions:
To Cook the Chicken:
Sprinkle salt, paprika, and pepper over the chicken breasts, then rub each until well coated.
Place a large skillet on the stove and turn the heat to medium-high.
Add 2 tbsp of butter and allow it to melt.
Add the chicken into the hot skillet, then cook each side for about 3 minutes or until golden brown. Transfer the chicken onto a clean plate.
To Make the Creamy Sauce:
In the same empty skillet, add another tablespoon of butter and allow it to melt again.
Add garlic, then sauté for about a minute or until aromatic.
Add flour, then whisk and cook for a minute to remove the raw taste and turns golden brown.
Add the wine, then stir until well blended. Simmer for about 2 minutes and scrape the bottom of the skillet to get the browned bits.
Add lemon juice, chicken broth, and heavy cream. Stir everything until well blended. Season with paprika and salt. Simmer for about 2 minutes.
Add the spinach, then allow it to wilt for 2 minutes.
Put the chicken breasts back into the skillet, then toss until well-coated with the delicious sauce. Cook for additional 5 minutes.
Serve and enjoy!
