This Tuscan roast chicken is insanely delicious! A comforting, homey dish that is always a hit at our every family gathering. The skin is gorgeously golden, the flesh of the chicken is succulent and perfectly cooked while the sauce is delectable, rich, and chickeny! This Tuscan roast chicken surely hits all the perfect spots!
Ingredients
8 garlic cloves
1 x 1.8-2kg free range/organic chicken
2 onions, quartered
1 c. white wine
fresh rosemary
1 c. chicken stock
Rub:
2 garlic cloves
2 sprigs of fresh rosemary
4-5 tbsp olive oil
zest and juice of 1 lemon, reserve lemon
salt & pepper to taste
How to make Easy Tuscan roast chicken
Step 1: Prepare the oven. Preheat it to 200 degrees C.
Step 2: For the rub, start by finely chopping the rosemary and garlic. Stir them with lemon zest & juice, salt, pepper, and olive oil. Over the chicken, rub the mixture, gently loosening the skin and pushing some of the mixture under the skin.
Step 3: In the cavity of the chicken, place the reserved lemon. In an oven-proof dish, place the chicken. Then, add the onions along with the garlic cloves and extra rosemary. Over the chicken, pour the wine and chicken stock.
Step 4: In the preheated oven, place the chicken and adjust the oven temperature to 160 degrees C. Roast the chicken for about 45 minutes or until the chicken is almost cooked through. To let the chicken skin crisp up, adjust the oven temperature to 220 degrees.
Step 5: Take the chicken out of the oven once it is golden brown and completely cooked. Before carving, let the chicken rest for about 10 to 15 minutes.
