I have never tried anything like this before! I am so glad that I finally decided to give this recipe a try! I love how all the ingredients compliment well with each other. You will surely love the rich apple flavour. Follow the steps and they will guide you to perfection. Enjoy!
Ingredients:
Cake:
8 tbs unsalted butter at room temperature
1 large Granny Smith apple about 8 ounces, peeled, cored, and roughly chopped
1 ½ cups apple cider
½ cup milk at room temperature
2 ½ cups flour
1 ½ tsp baking powder
½ tsp baking soda
1 tsp salt
¼ tsp ground nutmeg
¼ tsp ground mace
¾ cup sugar
½ cup packed light brown sugar
3 eggs at room temperature
¼ cup oil
1 tsp vanilla
Sugar Coating:
6 tbs sugar
1 tsp cinnamon
⅛ tsp nutmeg
⅛ tsp salt
Directions:
Step 1: Place the rack in the centre of the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply cooking spray in a Bundt pan.
Step 3: Place a medium saucepan on the stove and turn the heat to medium-high.
Step 4: Add the cider and sliced apple. Allow the mixture to boil.
Step 5: Simmer over medium heat for 10 to 12 minutes or until all the liquid has been absorbed by the apples.
Step 6: Remove from the heat and let it sit at room temperature to cool for 5 minutes.
Step 7: Mash the apples and add milk.
Step 8: In a medium mixing bowl, add the flour, baking soda, baking powder, mace, nutmeg, and salt. Whisk until well mixed.
Step 9: In another mixing bowl, add the sugar, butter, and brown sugar. Beat for 3 minutes at medium speed until creamy.
Step 10: Add eggs gradually and beat every addition. Add oil and beat until well combined.
Step 11: Transfer the apple mixture and flour mixture into the butter mixture and beat using a spatula until well combined.
Step 12: Beat for 20 seconds at medium speed and add the vanilla.
Step 13: Transfer the batter into the greased pan.
Step 14: Place inside the preheated oven and bake for45 minutes or until a toothpick comes out clean after inserting in the middle.
Step 15: Remove from the oven and let it cool on a wire rack for at least 10 minutes.
How To Make the Cinnamon Sugar Coating:
Step 1: In a small mixing bowl, add the cinnamon, sugar, nutmeg, and salt. Stir until well mixed.
Step 2: Sprinkle on top of the cake and evenly spread it all over.
Step 3: Let the cake rest for 1 hour.
Step 4: Serve and enjoy!
