How often do you eat squash and zucchini with cheese? I mean, I never thought that these three ingredients would go well with each other. Clearly, I was wrong! Ingredients:
2 large zucchinis
2 large yellow squash
2 tsp. garlic powder
½ tsp ground black pepper
½ tsp salt or to taste
¼ cup freshly grated parmesan cheese you can also use finely shredded parmesan cheese
2 TBSP olive oil
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Chop the yellow squash and zucchini into ¼-inch round slices.
Step 3: Place the chopped zucchini and squash in a large mixing bowl.
Step 4: Drizzle olive oil and sprinkle pepper and garlic powder. Stir until well mixed.
Step 5: Transfer the oiled and seasoned zucchini and squash into the prepared baking pan. Arrange them in a single layer.
Step 6: Sprinkle shredded cheese over the squash and zucchini.
Step 7: Place inside the preheated oven and roast for 9 to 10 minutes or until fork-tender.
Step 8: Place the pan on the top rack and turn on the broiler. Broil for 2 to 3 minutes on high setting or until crispy and brown.
Step 9: Remove from the oven and let it sit at room temperature to cool.
Step 10: Serve and enjoy!
