Ingredients:
6 8-inch Tortillas makes about 24-30 rounds
1 cup graham cracker crumbs
½ teaspoon Cinnamon
¼ cup butter melted
Cheesecake Filling:
1 cup heavy cream
1 cup cream cheese softened
1 teaspoon lemon zest
1 teaspoon vanilla
¼ cup powdered sugar
Apple Filling:
2 Tablespoons butter
3-4 medium apples peeled, cored, and diced into ¼-inch cubes
⅓ cup brown sugar
3 Tablespoons water
1 teaspoon cinnamon
⅛ teaspoon nutmeg
1 Tablespoon + 1 teaspoon cornstarch
2 Tablespoons water
Canned Apple Filling:
1 can apple pie filling
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: In a medium mixing bowl, add the cinnamon and graham cracker crumbs. Stir until well mixed, then set aside.
Step 3: Cut with a cookie cutter 4 to 5 rounds of each tortilla to have 24 to 30 shells.
Step 4: Dip each cut tortilla into melted butter and coat evenly with the graham mixture crumbs.
Step 5: Flip the muffin tin and place the coated tortillas in the middle of each muffin cup.
Step 6: Place inside the preheated oven and bake for 10 minutes or until the colour turns golden brown.
Step 7: Remove from the oven and let it sit on a wire rack to cool.
Step 8: Place a pan on the stove and turn the heat to medium.
Step 9: Add butter and allow it to melt. Add the apples, brown sugar, 3 tablespoons of water, and sugar. Stir until the sugar is dissolved. Cook for 4 to 6 minutes or until the apples are soft.
Step 10: In a small mixing bowl, add 2 tablespoons of water and cornstarch. Stir until thick.
Step 11: Transfer the mixture into the apples and cook for another 4 minutes or until thick. Remove from the heat and allow it to cool.
Step 12: In a medium mixing bowl, add the powdered sugar, heavy cream, cream cheese, vanilla, and lemon zest. Beat until creamy and thick. Place inside the refrigerator to chill for 30 minutes.
Step 13: Transfer the filling into a piping bag.
Step 14: Spread the filling in each taco shell and spoon ½ of the apple filling. Sprinkle graham cracker on top.
Step 15: Serve and enjoy!
