Ingredients:
2 large eggs
½ cup melted butter
1 cup white sugar
1 cup crushed pineapple with juice
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
3 teaspoons baking powder
½ teaspoon baking soda
¾ teaspoon salt
½ cup chopped walnuts
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply cooking spray in a 9x5x3-inch loaf pan.
Step 3: In a medium mixing bowl, add the butter, egg, and sugar. Beat until smooth.
Step 4: Add in the vanilla and pineapple. Stir until well mixed.
Step 5: In another mixing bowl, add the baking powder, flour, walnuts, soda, and salt. Whisk until well mixed.
Step 6: Transfer the mixture into the pineapple mixture. Stir until well blended and moist.
Step 7: Transfer the mixture into the prepared loaf pan.
Step 8: Place inside the preheated oven and bake for 1 hour or until a toothpick comes out clean after inserting in the middle of the bread.
Step 9: Turn off the oven and let the bread sit inside for about 10 minutes or until set.
Step 10: Remove from the oven and the pan. Wrap the bread with plastic to cool completely.
