These cookies are very moist on the inside and crispy on the outside. We all need these cookies in our lives. They are a great treat to have pretty much all day! Pair it with your favourite cup of coffee and you have yourself the treat to remember. Enjoy!
Ingredients:
4 ½ cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 ½ cups white sugar
1 ½ cups brown sugar
1 ripe banana
4 large eggs
1 tablespoon vanilla extract
5 cups chocolate chips
2 cups sweetened flaked coconut
2 cups chopped almonds
Directions:
Step 1: Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Step 2: Apply cooking spray in prepared baking sheets.
Step 3: In a small mixing bowl, add the baking soda, flour, and salt. Whisk until well mixed.
Step 4: In another mixing bowl, add the banana, white sugar, and brown sugar. Beat until the texture becomes creamy.
Step 5: Add 1 egg at a time and beat every addition. Add vanilla and stir until well mixed.
Step 6: Transfer the banana mixture into the flour mixture and stir until it becomes a batter. Add coconut, almonds, and chocolate chips. Spoon the batter and drop them into the greased baking sheets.
Step 7: Place inside the preheated oven and bake for 8 to 10 minutes or until the cookies are golden brown and crispy.
Step 8: Remove from the oven and place on a wire rack to cool at room temperature.
Step 9: Serve and enjoy!
Note:
If you do not have bananas, you can use 1 cup of butter instead.
