Ingredients:
1 tablespoon olive oil
4 sweet potatoes
sea salt to taste
¼ cup unsalted butter
1 (8 ounces) package cream cheese, softened
½ teaspoon salt
1 pinch cayenne pepper, or more to taste
ground black pepper to taste
1 cup mini marshmallows
Directions:
Step 1: Prepare the oven and preheat to 200 degrees C or 400 degrees F.
Step 2: Line with parchment paper a baking sheet.
Step 3: Massage oil on each sweet potato and season each with salt.
Step 4: Place the seasoned sweet potatoes on the lined baking sheet.
Step 5: Place inside the preheated oven and bake for 50 to 60 minutes or until soft and tender.
Step 6: Let the potatoes sit at room temperature to cool for at least 10 to 15 minutes.
Step 7: Place a saucepan on the stove and turn the heat to medium.
Step 8: Add the butter and allow it to melt for 5 minutes or until the colour turns brown.
Step 9: Cut the potatoes in half and spoon the insides. Place them on a large mixing bowl.
Step 10: Add cream cheese, ½ teaspoon of salt, browned butter, black pepper, and cayenne pepper. Mash until smooth.
Step 11: Fill each potato skin with the mixture and place ¼ cup marshmallows on top of each.
Step 12: Place the filled potatoes back to the baking sheet. Place inside the oven and bake for another 10 minutes or until the marshmallows are slightly brown.
Step 13: Remove from the oven and let it sit on a wire rack to cool at room temperature.
