Ingredients:
2 large eggs
2 cups white sugar
½ cup of vegetable oil
2 teaspoons vanilla extract
2 cups apples, peeled and diced
2 cups all-purpose flour
1 ½ teaspoons salt
1 teaspoon baking powder
½ teaspoon ground cinnamon, or more to taste
Directions:
Step 1: Prepare the oven and preheat to 175 degrees C or 350 degrees F.
Step 2: Apply cooking spray in a loaf pan.
Step 3: In a medium mixing bowl, add the eggs, vanilla extract, vegetable oil, and sugar. Beat until well blended, then add in the apples.
Step 4: In another mixing bowl, add in the baking powder, cinnamon, flour, and salt. Stir until well mixed, then transfer the mixture into the bowl with the apples. Stir until it becomes a thick batter.
Step 5: Transfer the batter into the greased loaf pan and cover it with aluminium foil.
Step 6: Place inside the preheated oven and bake for 45 minutes or until a toothpick comes out clean after inserting in the middle of the bread.
Step 7: Remove from the oven and let it sit for 10 minutes before placing it on a wire rack to cool completely at room temperature.
Step 8: Serve and enjoy!
