I’m having a hard time expressing myself to describe to you how amazing these cookies are! I’ll just go with it, perfect! Yes, you read it right. A bite of these cookies will light up your day. Try it and you have yourself a treat!
Ingredients:
Cookies:
1 cup brown sugar
1 cup butter, softened
⅔ cup pumpkin puree
1 egg
2 teaspoons vanilla extract
3 ½ cups all-purpose flour
2 tablespoons ground cinnamon
1 ½ teaspoons ground ginger
1 teaspoon ground nutmeg
1 teaspoon baking powder
½ teaspoon ground cloves
½ teaspoon allspice
¼ teaspoon salt
Icing:
2 cups confectioners’ sugar
¼ cup milk
3 tablespoons light corn syrup
4 teaspoons ground cinnamon
2 teaspoons vanilla extract
Directions:
Step 1: Prepare the oven and preheat to 190 degrees C or 375 degrees F.
Step 2: In a large mixing bowl, add in the butter and sugar. Beat using an electric mixer for 1 to 2 minutes or until creamy.
Step 3: Add in egg, pumpkin, and 2 tablespoons of vanilla extract. Beat until well blended.
Step 4: In another mixing bowl, add baking powder, flour, ginger, 2 tablespoons cinnamon, and salt. Whisk until well mixed. Transfer the mixture into the pumpkin mixture and stir until it forms into a dough.
Step 5: Press dough in a cookie press. Arrange the cookies on the prepared baking sheets leaving 2-inches space between each cookie.
Step 6: Place the cookies in the preheated oven and bake in batches for 5 to 8 minutes or until the sides turn brown.
Step 7: Remove from the oven and let them sit on a wire rack to cool at room temperature.
Step 8: In a small mixing bowl, add in the milk, confectioners’ sugar, 4 teaspoons cinnamon, 2 tablespoons vanilla extract, and corn syrup. Whisk until well mixed.
Step 9: Dip the cookies into the icing and remove the excess by shaking it gently.
Step 10: Place the dipped cookies on waxed paper and allow the icing to dry up.
Step 11: Serve and enjoy!
