Ingredients:
2 ¼ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 egg
1 cup buttermilk
½ cup butter, melted
1 teaspoon vanilla extract
1 ½ cups packed brown sugar
2 cups diced apples
½ cup packed brown sugar
⅓ cup all-purpose flour
1 teaspoon ground cinnamon
2 tablespoons butter, melted
Directions:
Step 1: Ready the oven and preheat to 190 degrees C or 375 degrees F.
Step 2: Apply cooking spray in a 12-cup muffin tin or line muffin paper.
Step 3: In a large mixing bowl, add in the baking soda, 2 ¼ cups of flour, and salt. Stir until well mixed.
Step 4: In a small mixing bowl, add in the buttermilk, egg, vanilla, ½ cup melted butter, and 1 ½ cups of brown sugar. Stir until well mixed and until the sugar is dissolved completely.
Step 5: Transfer the egg mixture into the flour mixture and toss in the diced apples. Stir until well blended.
Step 6: Spoon the mixture into the greased or lined muffin tins. Fill each muffin tin to the top.
Step 7: In a small mixing bowl, add in ⅓ cup of flour, cinnamon, and ½ cup of brown sugar. Stir until well mixed.
Step 8: Add in 2 tablespoons of melted butter and use a for to mix it with the rest of the ingredients.
Step 9: Spread the mixture over the muffins.
Step 10: Place inside the preheated oven and bake for 25 minutes or until the muffins bounces back when pressed.
Step 11: Remove from the oven and let it sit on a wire rack to cool at room temperature.
