What an awesome salad! I have never eaten like this before. I never thought that salad could be this delicious. The set of veggies in this salad are amazing. By the way, I used fresh ones for a better quality of taste. I love everything about this salad. From the veggies to the dressing. Everything tastes amazing! Try making this in the evening and leave it in the fridge overnight to chill and for the flavors to incorporate well. Serve it the next morning and I promise you that it will be the best breakfast meal you will ever have!
Ingredients:
16 ounces orzo
3 cups baby spinach leaves, gently torn into large pieces
1 ½ chopped red bell pepper, about one red bell pepper
1 cup cucumber, diced and seeded, about one medium
¾ cup red onion, diced
5 ounces Castelvetrano green olives, drained and halved
5 ounces Kalamata pitted olives, drained and halved
7 ounces feta cheese
½ cup canola oil
¼ cup olive oil
1 lemon, juiced
1 ½ teaspoons oregano
1 teaspoon kosher salt
1 teaspoon black pepper
Directions:
Step 1: Place a pot on the stove and pour water and salt.
Step 2: Bring the water to a boil and cook the orzo for 10 minutes or until al dente’. Drain the water, rinse, and allow it to cool.
Step 3: Place the cooked orzo in a large mixing bowl. Toss in the chopped vegetables, spinach, olives, and ½ of the feta cheese (crumbled) on top of the pasta.
Step 4: In a small mixing bowl, add olive oil, canola oil, oregano, lemon juice, salt, and pepper. Whisk until well mixed.
Step 5: Pour in the vinegarette into the mixture and toss until all the vegetables and pasta are coated evenly.
Step 6: Season with salt and pepper if needed and top with the rest of the feta cheese.
Step 7: Place inside the fridge for 1 hour or overnight to chill.
Step 8: Serve and enjoy!
Note:
You should consume this pasta within 2 to 3 days. It usually lasts in the fridge for about a week.
